Mango, passion fruit and Eton-Mess with Greek yogurt

INGREDIENTS FOR THE MERINGUE

Ingredients (6 servings)
2 large egg whites
1 pinch salt
100 g granulated sugar
2 mangoes, ripe, diced
6 passion fruit, ripe
1/2 tablespoon(s) honey, liquid
100 g whipped cream
100 g Greek yogurt
  • Preheat the oven to 130 °C.
  • Beat the egg whites with a pinch of salt until stiff. With the mixer running, gradually add the sugar until everything is well mixed.
  • Line a large baking tray with baking paper. Pour the mixture into the center of the baking tray and shape and spread with the back of a spoon.
  • Bake for about 1 hour until the meringue is crispy on the outside and still a little soft and sticky on the inside. Leave to cool.
  • Place the diced mangoes in a bowl and drizzle over the honey. Beat the whipped cream until soft peaks form, then fold in the yogurt. Keep in the fridge until ready to serve.
  • Crumble the meringue into the bottom of the serving glasses, cover with the whipped cream and yoghurt mixture, add the mango pieces and some passion fruit flesh and repeat the layering again to fill all 6 glasses.
  • Finally, top with passion fruit and serve immediately.
